Description
Zorzal is based in Gualtallary, the highest-elevation portion of Mendoza's Uco Valley. At 1350 meters above sea level, vineyards enjoy hot, sunny days and rapidly-cooling nights, which helps grapes ripen slowly and retain their natural acidity. That acidity is so critical in white wines like this 100% Sauvignon Blanc, where it adds energy and a refreshing, citrusy zip. Hand harvested grapes are destemmed and fermented with wild yeast in temperature-controlled stainless steel tanks, and the finished wine is aged for a further two months before bottling. More mineral-driven and austere than most Sauvignon Blancs from New Zealand, this example is more reminiscent of French examples of this classic grape. Serve at a well-chilled 8 C and enjoy over the next two years.

Naturally high acidity and herbaceous, lemony freshness make this a perfect match for asparagus risotto or raw oysters, or enjoy on its own as an aperitif.
